What is Sushi Rice and what do we use it for?

 

Clearspring’s Organic Sushi Rice is ideal for creating delicious, perfectly cooked rice that can be used for example in Japan’s most celebrated dish, sushi.

The short grain Selenio rice variety has characteristics very similar to the Japonica rice that is used to make sushi in Japan. It is organically grown in the Piemonte region of northwest Italy, an area also renowned for the cultivation of risotto rice by father and son producers Giorgio and Antonio Tinarelli, who are members of the Alce Nero Co-operative.

Once ripened, the rice is then polished to perfection by Giuseppe Martinotti, a rice miller located in the nearby town of Trino.

How to prepare Sushi Rice?

 

There are many ways to cook Sushi Rice.

One of the recommendations looks like the following:

 

• It is advisable to wash the rice several times.
• Wash 1 cup (250g) of Sushi Rice in cold water, drain, and let it stand for a few minutes..
• Transfer to a saucepan with 1¼ cups (310ml) of cold water.
• Leave to soak for 30 minutes.
• Bring it to the boil.
• Cover and lower the heat to simmer for 10 – 12 minutes or until all the water has been absorbed.
• Mix with rice vinegar.
• Remove from heat and leave it covered, for 10 minutes.

How to add Japanese Rice Vinegar to Sushi Rice?

 

After cooking Sushi Rice, we can add some Japanese Rice Vinegar to the cooking pot.
