Super-quick Coconut flour muffin recipe

Ingredients (for 10 cornbread muffins):
half a cup of Low Carb Coconut Flour
on third of a cup virgin coconut oil
4 eggs (room temperature)
2 tbsp apple sauce
2 tbsp clover organic raw honey
1/2 tsp baking soda
1 tsp apple cider vinegar
How to prepare Paleo coconut flour muffins:
- Preheat the oven to 180 degrees.
- Combine the coconut oil, eggs, apple sauce, vinegar and honey and then slowly add the low carb flour alternative and baking soda to the mixture. You should get a smooth and light mixture.
- Fill 10-12 muffin cups and bake them for appr. 20 minutes. Enjoy.
