Making Process of Poppy Seed Palinka

Hungarian palinka is exclusively made from 100% fruit of the best quality and not from grains like whiskey or vodka. The mash (cefre is the Hungarian word for it) is the fruit base that contains only perfect riped fruits. So the mash rests in a barrel until it “matures”. Then the next step is the distillation that is a very special step in the process. It means, that after the fermentation of the fruit mash, they boil it to extract the flavours and the alcohol (ethyl alcohol) from the fruit.

The next step makes Poppy Seed palinka so unique. The raw palinka rests on a so-called poppy seed bed for a while to absorb the smell and aroma of poppy.

Palinka is ageing for a while in barrels (approximately 40-60 days) similar to wine. The palinka has to rest, and as a result, it becomes balanced and really enjoyable. Palinka is not a light spirit but a strong and intensive drink.
