Gluten-Free Milk Loaf Recipe (490g Loaf)
Ingredients:
✔️ 250g Gluten-Free Express Flour Mix
✔️ 55g Erythritol or Low-Carb Powdered Sugar
✔️ 1g Salt
✔️ 1g Sodium Bicarbonate
✔️ Pinch of Vanilla
✔️ 10g Grated Lemon Zest
✔️ 30ml Apple Cider Vinegar or Fresh Lemon Juice
✔️ 260ml Lukewarm Water
✔️ Dried Fruits (Optional)
✔️ Orange Juice (for brushing)
Method:
1️⃣ Preheat oven to 180°C (356°F).
2️⃣ In one bowl, mix all liquid ingredients, and in another, mix dry ingredients.
3️⃣ Combine both mixtures and knead into a smooth dough that doesn’t stick to your hands.
4️⃣ Let the dough rest for 5 minutes.
5️⃣ Divide the dough into three equal parts, roll into 9-inch ropes, and braid.
6️⃣ Brush with orange juice and bake for 50 minutes at 180°C.
7️⃣ Brush again and bake for an additional 15 minutes at 200°C.
8️⃣ Let cool on a rack before slicing.
